Recipe : caramel frappucino cupcakes | Fatin Suhana


Ingredients :
1-3/4 cups all purpose flour
2 cups sugar
3/4 cups cocoa powder
2 tsp baking soda
1 tsp baking powder
1 tsp salt
1 cup buttermilk
1/2 cup vegetable oil
3 large eggs (make sure in room temperature)
1 tsp vanilla extract
1 cup freshly brewed hot coffee
1 tsp espresso powder (if coffee lover blh letak, if not tak
letak pun takpe sebab rasa coffee dah kuat mcm badang. huh?)

How to make ze cupcakes :
1. Preheat oven to 150C
2. In a medium sized bowl, whisk together flour, sugar, cocoa, baking soda,
baking powder and salt.
3. Brew the coffee and dissolve the espresso powder in the coffee
4. In the bowl of an electric mixture, beat buttermilk, oil, eggs and vanilla together
on medium speed untill well combined
5. with the mixer on slow speed, add the dry ingredients in 3 batches, mixing untill only
just incorporated
6.Add the coffee and stir until combined, scraping the bottom of the bowl with a 
rubber spatula
7. Fill cupcakes liners a little more than halfway (3/4) and bake for 15-20mins, or
untill cake tester comes out clean.

caramel sauce :

1/2 cup heavy cream
3tbsp butter
3tbsp light corn syrup
1-1/2 cup packed light brown sugar 
How to make 'em :
1. Combine all ingredients in a saucepan, bring to a boil, and boil briskly for few minutes,
stirring occasionally
2. Cool before placing a piping bag or plastic squeeze bottle 
3. once the cupcake are cooled, use a serrated knife to cut out a small cone-shaped chunk
from each cupcake. ( u can use ur own creativity on how to dig the cuppies if u
don't have the knife actually)
4. Fill with caramel, cover hole with slice of cake. you can top with whipped cream
and drizzle more caramel on top of that or just leave it as simple as it can be.
because we already caramel filling inside :)
